TWD: Chockablock Cookies

This week's Tuesdays with Dorie is Chockablock Cookies chosen by Mary of Popsicles and Sandy Feet. I have been on a cookie baking binge the last few days. We have a bake sale for Cub Scouts this week, and then TJ is making his First Communion in a couple of weeks, so I'm sticking tons of cookies in the freezer for these two events. These cookies couldn't have come at a better time.

These cookies just scream HEALTHY to me. They have dried fruit and nuts and coconut and are just so granola-y. The recipe called for a cup of dried fruit and I used a Trader Joe's Dried Fruit Golden Berry Blend. It had golden raisins, cherries, cranberries, and blueberries. It also called for nuts and I used cashews. I liked these cookies! I'm not a fan of coconut, so next time I might leave these out, but they were definitely good.

good idea to use the mix of fruits, that way you dont get stuck with bags of things you might not use later ;)

Good choice on fruits. I used a similar blend, but mine came with nuts and seeds - I just dumped them all in! Easy! Glad you liked them too.
