TWD: Milk Chocolate Mini Bundt Cakes


It's my turn! It's my turn! This is so exciting! The kids and I have been planning this for weeks now. They were so excited to help pick the recipe. We were actually going to pick the Cocoa-Nana Bread from last week, but alas it wasn't meant to be. I'm glad we picked the Mini Bundts though.

Now, I know mine aren't the prettiest little cakes. I had some issues getting them out of the pan--I guess I didn't spray them enough and only 1 came out complete. I also had issues with my glaze, and apparently I wasn't the only one. It tasted fine, but it wasn't real pretty. Since Gabby is allergic to peanuts and tree nuts, I opted to use caramel bits instead for the swirl. And OMG, it was a great choice! It really added an excellent flavor. I highly recommend these--they don't require crazy ingredients, they are simple to make, and substitutions are great in number! Thanks! I enjoyed your choice and I think I'll make them again sometime. Caramel on the outside was good, but caramel inside does too!

Thanks so much for picking these, Kristin, as my family really liked them a lot. It was such fun to make a miniature something (I have two teenage boys so miniatures are not frequently in the line up as you can imagine) and I had fun with practicing drizzling. Yours look very cute sitting there just waiting for an eater! I always have trouble with bundts coming out of the pan, too. This time I got one of those baking sprays with the flour in it, I think it was Baker's Joy, but there are others, and the little bundts popped right out. What a deal!
