TWD: Fresh Mango Bread


This week's Tuesdays with Dorie is Fresh Mango Bread chosen by Kelly of Baking with the Boys. When we were in Grand Cayman in March we ate dinner at the Ritz Carlton one night (which by the way if you go to Grand Cayman 7 at the Ritz has to die for Mango Bread and Steaks, but is pricey!). Anyways, they served Mango Bread instead of the typical basket of rolls. We were a little unsure about it at first, but OMG! It was soooo good. So when I told Tim I was making Mango Bread, he got all excited. This bread was fabulous. I ended up making one regular loaf and a mini loaf because I had so much batter. I gave the mini loaf to our next door neighbors, and TJ got mad at me because he loves it so much.


As for the recipe, I don't know if I used super strength limes or what, but the lime flavor was really strong. So was the ginger. So next time, I will cut these flavors down somewhat. Also, the recipe calls for 1 mango. It took 3 mangoes for me to get 2 cups, so I don't know if I used puny small mangoes, or if Dorie's were just ginormous.

TWD: Tartest Lemon Tart


This week's Tuesdays with Dorie is Tartest Lemon Tart chosen by Barb of Babette Feasts. I like fruity desserts, but I don't think I've ever had anything lemony really, except maybe some lemon bars. When I saw this picked, I was glad because I am getting a little tired of chocolate. It's spring I want sunshine, warm weather, and citrus-y stuff!


I made 4" tartlettes, beacuse Tim wouldn't eat any and I wasn't sure if the kids would. I just made 2 of them and then with the extra filling, made two little cups of lemon brulee. I'm not sure if I had wussy lemons or what, but with the exception of one or two bites, it wasn't super-pucker your mouth tart. The little brulees were absolutely horrible. I'm not sure if they didn't cook enough or cooked too long or sat in the fridge too long or what, but I took one bite and threw the rest away. The tart was good--especially with lots of whipped cream on it.

TWD: Tiramisu Cake


This week's Tuesdays with Dorie was Tiramisu Cake chosen by Megan of My Baking Adventures. I am a fan of Tiramisu. I won't choose it every time we go out or anything like that, but I do order it occasionally. So I was excited about this cake. But the kids and Tim ABHOR coffee and anything that has even a hint of mocha flavor. Which can sometimes be a blessing--like when I would buy French Silk or Cappaccino Chip Ice Creams and would get to eat the whole thing on my own over several weeks. But with a cake that has a short term shelf life, is not such a great thing. So I decided to halve the recipe and enjoy it myself.


Which didn't go so well. Everything was a cinch to make. As you can see I made 2 small loaf sizes. And so I stacked them. Why I didn't split them and make 4 layers, I will never know, but it was a big mistake. About 30 seconds after I took the above picture it wobbled and I screamed Oh My God it's going to fall! And then it fell over. So I made it into a trifle. It was good, especially the cake part, but I'm not going to make it again since I'm the only one that will eat it.
