
This week's Tuesdays with Dorie is Coconut Thins chosen by Jayne of the Barefoot Kitchen Witch. My pictures will be posted later because my laptop is dying and my pictures are all on there. My new mac book should be here sometime this week though and as soon as I am able to transfer everything over, I will post them.
I was a little skeptical about these because I am not a huge coconut fan. The only thing that I really like coconut in is in Oatmeal Cookies that my mom made when we were little. Occasionally I'll have a drink with it like a Pina Colada or a smoothie or something, but it is very rare. But since I like the coconut in the cookies, I decided to go for it. Plus, I can always give them to my cousins if I don't like them(or if I like them too much and need to get them away from me fast).
I am SOOOO glad I made these! These were excellent. The nuttiness of the macadamia nuts was excellent. They were easy to make and came out wonderfully. After I ate a couple from the cooling rack, I thought, Hey! Put some chocolate spread(it's similar to Nutella, but nut free, made by President's Choice and I get it at Jewel) on them. So I did. And I fell even more in love. Dipped in chocolate these cookies are out of this world. I highly recommend them!

Oooh, I wish I had thought of trying them with chocolate. I think I have about 4 left. I might try it.
